Grilled Peaches

We served this wonderful peach dish last night at dinner. It was a clear winner, with everyone wanting seconds. It's a great way to enjoy peaches while they are plentiful.

Peaches before the cheese was added.

Grilled Peaches

4 large freestone peaches
1/4 cup honey
1 T. balsamic vinegar
feta or blue cheese

Cut peaches in half and remove pit. Place face down on hot grill until somewhat tender and grill marks appear. Turn peaches over and brush with mixture of honey and vinegar until juices are boiling in the center. Remove and sprinkle with cheese. Serve warm.

To make this into a dessert, grill as above, but omit vinegar and cheese and add a dash or two of cinnamon, nutmeg, or ginger along with the honey. Serve with a scoop of vanilla ice cream.

Summer bliss...
